Curry Chickpea Salad

Ingredients
  

  • 1/3 cup mayonaisse
  • 3/4 cup plain greek yogurt
  • 1/4 cup cilantro finely chopped
  • 1/4 cup roasted almonds chopped
  • 1/3 cup golden raisins or chopped dried apricots
  • 2 celery stalks finely chopped
  • 1 green apple finely chopped
  • 1/4 red onion finely chopped
  • 1 tsp kosher salt
  • 2 tbsp curry powder
  • 2 15oz cans chickpeas drained

Method
 

  1. In a large bowl, add the chickpeas, curry powder, salt, green apple, celery, red onion, and raisins. Stir until combined.
  2. Add the mayo and greek yogurt. Stir until everything is evenly coated. Fold in cilantro and roasted almonds. Season to taste.

Notes

Enjoy on a sandwich, as a melt, in a tortilla, in a pita, with butter crackers, on a wasa cracker, or on a bed of lettuce.
